Visit of Dr. Yuri Jorge Peña Ramírez from El Colegio de La Frontera Sur in Mexico as part of the Erasmus+ KA171 Staff Mobility for Teaching Program.

From October 14 to 18, 2024, the Faculty of Biology and Environmental Sciences at UKSW had the honor of hosting Dr. Yuri Jorge Peña Ramírez, an academic lecturer from El Colegio de la Frontera Sur in Mexico, who visited our university as part of the Erasmus+ KA171 Staff Mobility for Teaching program.

During the visit Dr Peña Ramírez coducted a series of leactures for students from the Faculty of Biology and Environmental Sciences. The lectures focused on fermentation processes, with a particular emphasis on spontaneous fermentation.

During classes there were discussed following topics:

  • Basic mechanisms of fermentation and its significance in various contexts.
  • Spontaneous fermentation – processes occurring without the controlled addition of microorganisms.
  • Fermentation consortia – diversity of microorganisms involved in fermentation and their dynamic changes.
  • Sources of fermentative microflora – origins of microorganisms participating in fermentation processes.
  • Eubiosis and dysbiosis – the impact of microbial balance on fermentation processes.
  • Methods for analyzing and modulating fermentation consortia and possibilities for controlling fermentation.
  • Summary and perspectives for further research in the field of spontaneous fermentation.

Lectures provided valuable information for students on the topic about meaning and mechanisms of spontaneous fermentation, as well as about its practical use in science and industry. The visit of Dr Peña Ramírez was an excellent opportunity to exchange knowledge and experiences and also to strengthen the partnership between UKSW and El Colegio de la Frontera Sur.
